Strawberry Kumquat Smoothie

After discovering my love for (my neighbor’s) kumquats, I dreamt up this smoothie that brings back memories of Orange Julius and Creamsicles.

  • 5 Kumquats (Just the peel)
  • 3 Strawberries
  • 1/2 Banana (frozen preferably)
  • 1 cup unsweetened vanilla almond milk (I used Califia Farms)
  • 1 scoop Vanilla Protein powder (I used Sun Warrior )
  • Spoonful of Almond Butter (I used Barney Butter)

The portions above will make a classic smoothie consistency.  If you want to make a smoothie bowl like the top photo, cut the almond milk down to 1/2 cup.  I’ve layered the smoothie with chia seed pudding and topped with bee pollen, granola and shredded unsweetened coconut.
